~Meal Time Mondays~

Easy Chicken Parmesan

Ingredients:
1/4 cup olive oil
1 egg
1/4 tsp. salt
1/2 tsp. dried basil
1/4 tsp. ground pepper
4 bonless, skinless chicken breasts thinly sliced
2 cups of your favorite Marinara sauce
8 slices part-skim mozzarella cheese
1/4 c. grated Parmesan cheese
1 Tbsp. salt
8 ounces spaghetti or linguine

Directions:
Preheat oven to 375 degrees F.
Heat oil in a large skillet over medium-low heat. Beat egg and 1/4 tsp of salt in a shallow dish. Mis bread crumbs, basil, and pepper in another shallow dish. Dip both sides of the breats in egg mixture, then into bread crumb misture. Set on a platter.
Increase heat to medium-high. When oil starts to shimmer, add chicken and saute until golden brown (5 to 6 minutes on each side).
Pour marinara sauce into a 9x13" baking dish. Place chicken in dish and top each with a portion of mzzarella and Parmesan cheese. Bake until cheese completely melts and browns, about 20 minutes.
Bring 2 quarts of water and 1 Tbsp of salt to a boil in a large pot. Add pasta, use package times as a guide, and boil until just tender. Drain, cover and set aside until chicken is ready.
Transfer a portion of pasta to each plate. Place sauce and chicken on top of pasta and serve.

**I have made this a LONG time ago, but had forgotten about it until I ran across the paper when clearing off a portion on our desk. I have everything I need to make it tonight (in need of a shopping trip so that's a miracle HaHa) plus veggies and french bread to serve with it. :)

There are a few adjustments you could make to make it a little bit healthier: Use low sodium, low sugar marinara sauce, and use just egg whites instead of the whole egg, as well as using whole grain bread crumbs. You could also use whole grain spaghetti. I don't know how big of a difference it would make, but I think a little bit here and there goes a long way. ;) Although, I don't have low sodium and low sugar marinara, or whole grain bread crumbs, so this time around I'll probably just stick to the recipe.
