As I mentioned before, I want to start trying one new recipe a week. I also mentioned that I will try to post the recipes on my blog in case anyone is interested in them. (I know I always love to get/find new recipes!)
Here are today's recipes:
Lunch
Black Pepper & Parmesan Pasta (I have made this before, but haven't done so in a long time so decided to make it today.)
Ingredients:
Bowtie or Fiori Pasta
Chicken broth
1/2 c. Parmesan cheese
Freshly grated black pepper
Cook up the desired amount of pasta using the broth instead of water. When the pasta is cooked, drain most of the broth, but leave some in the pasta. Mix in parmesan cheese and allow to melt. Grate black pepper generously into the pasta mixture. Serve!
*Super easy and good! The only prob I have had with this is, when using the shredded parmesan cheese (from a bag) it does not melt well and turns into a big blob of cheese HaHa. In that case I just sprinkle a little over the top of the pasta before serving, instead of letting it "melt". I will have to try it again with the "can" of Kraft/whatever brand.
Dinner
Crock-Pot Turkey Breast with Cranberry Dressing
Ingredients:
1 (8 oz) package stuffing cubes
1/2 c. hot water
2 Tablespoons butter, softened
1 small onion, chopped
1/2 c. celery chopped
1/4 c sweetened dried cranberries
1 (3-pound) boneless turkey breast
1/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
Coat a 3-1/2 quart (or larger) slow cooker with nonstick vegetable spray.
Put stuffing cubes int he cooker and add water, butter, onion, celery, and cranberries; mix well.
Sprinkle the turkey breast with basil, salt, pepper. Place the turkey over stuffing mixture. Cover and cook on low for 6 to 7 hours. Remove turkey to a cutting board and slice. Stir the stuffing mixture until thoroughly mixed and allow to sit for 5 minutes. Spoon onto platter and top with the sliced turkey.
(Serves 4 to 6)
*This is in my crock-pot right now, so I can't say if it's good or not..but it sure sounds yummy! I am going to serve green beans and a sald with it as well.
I love crock-pot meals because they are so easy and usually so delicious! Can't wait to try it tonight!
P.S. My house smells soooo good! :) That is definitely a plus! ;)
*****Edited because the turkey dish did not turn out for me HaHa. I went to check on it and the stuffing had burned all around the sides of the crock-pot. Also, the turkey almost seemed like jerky! I don't think there was enough liquid in it for my crock-pot, and I don't think I had thick enough/or enough turkey breasts. So if anyone tries it and it works, let me know how it tastes! I was really looking forward to trying it!! *****

Bummer that it did not turn out - it sounded really good! I run into that problem with my crockpot sometimes, it cooks faster then what the recipe says, so I always have to watch it!

Raquel, I don't think you want me to cater for you. I burned a simple crock-pot recipe! But for a minimal fee I'm sure something could be worked out! ;)
