Around the Benson household we have a new, current favorite dinner. I thought I would share the goodness that is this meal with our friends, and family! :)
..I know, I know, you are overcome with excitment and anticipation.
So to add an edge.. *drum roll please*
Here it is in all it's glory...
BBQ CHICKEN PIZZA!!!
First you need to make the dough... or buy a premade pizza crust if you are lazy HaHa. ;) (ok, you could just be short on time instead of lazy!)
Here's what you'll need:
1 pkg. active yeast
1 1/4 c. warm water
2 Tbsp. cooking oil
4 c. flour
1 tsp. salt
Here's what to do:
Dissolve yeast in warm water, stir in oil. Sift flour and salt together and sitr into first mixture. Knead for 15 minutes (Great work out! ;) ), let rise until double in bulk.
This makes two pizzas. You can bake two or freeze half for another time!
Next you need to prepare the toppings.
Here's what you'll need:
Your favorite BBQ sauce
2 chicken breasts
Shredded Mozzerella Cheese
Tomatos (diced)
Red/purple onion (diced.. I chop the pieces up to be a little bigger than "diced" size and only use a little less than half the onion. B/c the pieces are bigger you don't need as much, but you can do it however you like!)
Here's what I do:
I bake 2 chicken breasts, covered in BBQ sauce in the oven at 375 for about an hour then shred it (but not too thin, you could also just cut it up if you want.) ...While you bake the chicken this is a good time to prepare the dough and dice/chop up your tomato and onion.
Roll the dough out onto the pizza pan and cover with as much BBQ sauce as you think looks "just right", then top with the shredded mozzerella cheese, chicken, diced tomato, and onion. I like to put it a little cheese on the top too. **You will probably have leftover chicken also. Refridgerate it for a BBQ chicken salad or something later! ;)
Bake at 425 degrees for 15-20 minutes. (Until crust is done, and cheese is melted.)
Cut it up, and scarf it down!! ;)
I didn't get this from a recipe, just kind of "figured" it out on my own so it is not "perfect." I haven't figured out just the right amount of BBQ sauce to put on yet. First time was too little, second time too much. So play with it yourself, and tailor it to your liking! You could try adding some spices if you would like, or alter the toppings. ..Just a forewarning though the BBQ sauce gives it a lot of spice and tang so you might want to start out in small amounts if you add spices.
..I think sometime in the future I might try adding pineapple, or playing with different toppings. If you mix it up let me know what you do and how you like it!!

Yum, I would attempt to try your recipe but well....we all know how well I can cook...because I don't! I bought the frozen BBQ Chicken Pizza from the California Pizza Kitchen at Wal-Mart, does that count? Maybe since the recipe makes two pizzas you can donate one to Kyle and I :) Love ya, hope Noah has recovered after his babysitting adventure with Aunty Raquel!
